Pin vite-task to the latest main and combine fspy's per-operation path accesses into the existing access-mode set. Co-authored-by: Charles Wang <wan9chi@users.noreply.github.com>

The Windows CLI E2E job failed while deleting a temp project after Vite loaded its config. Node retries that EPERM when maxRetries is set. Co-authored-by: Charles Wang <wan9chi@users.noreply.github.com>
