Removes Debian Bullseye from the "Physical and Virtual Hosts" tables in the compatibility matrix. Debian 11 LTS ended on 2026-08-31 and its package mirrors are being dismantled. It was dropped from the setup-scripts test matrix in steadybit/setup-scripts#73.
No other rows are changed. Adding newer releases follows the product decision tracked in Businessmap card 24508 (Linux Compatibility).
