Fix builds on modern Node and Linux

• replace the TypeScript webpack config with directly loadable CommonJS and update the production flag
• use maintained Electron rebuild tooling and a Node-compatible Sharp version
• remove the unused procps native dependency so current Linux distributions compile cleanly
• document the supported Node and Linux build requirements
