Bump Plaid SDKs to latest major versions (Node 42.1.0, Python 39.1.0, Ruby 46.1.0, Java 40.1.0, Go v42.0.0) and update non-Plaid dependencies to latest minor/patch versions including Flask, werkzeug, Gin, Maven plugins, and Ruby transitive gems.
