build: update build flow - #28

- Update the way version tags are added during build. Now we can tag a commit in github, and the correct version string will be used for the builds. No need to edit configure.ac anymore. - Drop the copr builds - Review the whole build flow, so everything happens in the github workflow. No need to keep the automation files anymore.
