Version bump and changelog for 2.0.0-beta.11.

Four features since beta.10: the rotate button (#49), AVIF (#50), MusicXML scores (#52) and JPEG 2000 (#53), plus the WAV naming fix (#45).

Rebased onto main, which has moved ten commits since I opened this. Everything that landed in between was test work (#55, #56, #57, #58, #59) and none of it changes behaviour, so the only changelog addition on the rebase is one I had missed: turns on ViewerProps. That type is exported, so handler authors see it. It is optional and ignoring it changes nothing, but it should not appear in a release unannounced.

JPEG 2000 needs nextcloud/server#64603 for the preview provider, and AVIF needs #64517 and #64519. All three are merged and land in 36.

Once this is in I will tag the release, wait for npm, and bump nextcloud/server#63954 to it.
