Updates the react dependency to 19.3.1 in nine workspace packages: React Native contract tests, RN examples (including Detox), React SDK contract tests and Vite examples, Vercel Next examples, and the Jest RN example.

Prior pinned versions differ by package (18.2.0, 18.3.1, ^18.2.0, or 19.2.3 on the React contract-tests app); all are aligned on 19.3.1 here. react-dom, @types/react, and react-test-renderer are not changed in this diff, so several apps still pair React 19 with older react-dom/types.

No SDK library source or published package manifests beyond these demo/test apps appear in the diff—only package.json dependency lines.
