This PR stops the Iceberg integration job from pulling
minio/minioandminio/mc. Docker Hub no longer serves those repositories, and anonymous pulls of the pinned quay.io tags return unauthorized.The compose file builds a local image from the GitHub release assets lance-spark uses. MinIO stays
