Update user documentation

This PR updates the user documentation with the newest features.

It also freezes library versions used for generating the documentation in order to prevent futur incompatibilities.

Two comments:

• images are quite small and difficult to read, the user needs to zoom-in (and out) the whole page to see the menus and stuff (see below). A solution which allows clickable content to zoom in would be nice, otherwise it may be better to capture smaller sections of the UI.

• the how to launch IBEX section needs improvement, current info is valid only on SDCC with proper modules, which is of little interest for most users, it should better describe how to install both the FE and BE on any linux system
