All version 3.x Dockerfile define ENV variables INFLUXDB3_DATA_DIR and INFLUXDB_IOX_DB_DIR however these don't exist.

Instead INFLUXDB3_DB_DIR and INFLUXDB3_OBJECT_STORE should be defined.
