ClientOptions is #[non_exhaustive] since sentry-rust 0.49.0, so the struct expression in the configure and verify onboarding snippets no longer compiles (E0639).

This PR raises the sentry-rust fallback version used in the install snippet to 0.49.0, so the fallback matches the API used in the snippets, and updates the configure and verify snippets to use the builder-style API instead.

The new code snippets compile cleanly in a minimal project using sentry-rust 0.49.0, and events arrive in Sentry.

Legal Boilerplate

Look, I get it. The entity doing business as "Sentry" was incorporated in the State of Delaware in 2015 as Functional Software, Inc. and is gonna need some rights from me in order to utilize my contributions in this here PR. So here's the deal: I retain all rights, title and interest in and to my contributions, and by keeping this boilerplate intact I confirm that Sentry can use, modify, copy, and redistribute my contributions, under Sentry's choice of terms.

Keeps the fallback in line with the builder API to be used in the snippets.
