Fix integration tests again

Why are the changes needed?

Flyte Admin integration tests are currently broken.

What changes were proposed in this pull request?

Minio disabled the image on quay so moved to a compliant mini fork. Updated the manifests to use API versions they do in the helm charts, which are more compatible with newer versions of k8s.
