chore(ecosystem): update the morphir-python submodule to 2eb7275 - #1107

Move ecosystem/morphir-python from dc0b317, which predates the Python compiler move, to finos/morphir-python main after the released migration (native-v0.1.0, python-v0.0.3, extension/python/v0.4.1) and its archived OpenSpec change. Building it now needs the Rust toolchain its mise configuration supplies, so the ecosystem guide runs mise.

The new one is finos/morphir-pythonmainafter the migration was merged and released (native-v0.1.0,python-v0.0.3,extension/python/v0.4.1) and its OpenSpec changemigrate-python-bindingwas archived (finos/morphir-python#47).At the new revision, the submodule builds a native compiler from source, which needs Rust. Its own mise configuration provides Rust, so
ecosystem/AGENTS.mdnow runsmise install && mise run install && mise run test-bddinstead ofuv sync && uv run behave. Nothing else in this repository reads the submodule's contents.The
ecosystem/morphir-rustsubmodule is unchanged: the CLI builds against it, and finos/morphir-rust#314's removal of the Python crate does not affect the CLI's dependencies.
