This PR only changes docs: it tables weft_ui's dark mode for now, and records the next steps now that #17 has merged.

• docs/weft_ui_dark_mode_plan.md is a new draft plan for dark mode, marked tabled. Its decisions haven't been reviewed. When the work is picked up again, this draft is the starting point. It recommends:
  • light-dark() values for the colour tokens, with color-scheme
  • an opt-in WeftUi.ColorScheme module (system, light, dark)
  • a contrast test over the token pairs, in both schemes
  • phases 0 (a spike) to 3 (the demo apps)
• docs/weft_ui_plan.md:
  • The Status section now says the plan is done and merged as weft_ui: accessible, styled UI components for Weft, with both demo apps on them #17, and lists the next steps:
    • dark mode first, linking the tabled draft
    • the manual VoiceOver pass from §8, still to do
    • the gaps the phase notes list as not done
  • The "Not in v1" entry for dark mode is marked as the next step, and summarizes the draft's approach.
