gh-action-sigstore-python v3 writes <dist>.sigstore.json bundles (see action.py at the pinned SHA 04cffa1, line 218), not <dist>.sigstore. The cleanup step only removed *.sigstore, so the bundles stayed in dist/ and pypa/gh-action-pypi-publish fails in its twine check step.

Reproduced locally with the same twine version the action pins (6.1.0):

Checking dist/pkg-0.1.0.tar.gz: PASSED
Checking dist/pkg-0.1.0.tar.gz.sigstore.json: ERROR InvalidDistribution: Unknown distribution format: 'pkg-0.1.0.tar.gz.sigstore.json'

Fixed in both release templates (default and mypyc). The bundles are still uploaded to the GitHub Release by the earlier step.
