The last CI failure is an intersection of a required CI update (to use a new Windows-11 image); given this is docs only, I'm going to merge this PR with that one failure. |

Adds the documentation and change note for the iOS version change in the iOS Xcode template, recently approved, thus adding user visibility of the change.
Documentation includes a helpful out-link to Apple's list of supported versions.
(I respect your restraint in not just committing the one-liner and enabling the process to be followed so that I/we all learn. More petrified of breaking kattni's docs than I was of the code, frankly.)
