Refreshes the README with the rewritten getting-started guide and corrected badges, links and install steps from appwrite/sdk-generator#2077 and appwrite/appwrite#14613.

README files only. No code, version or changelog changes, so this does not need a release.

The README now provides updated Swift 6.1 installation instructions, server-side setup guidance, and examples for requests, typed rows, model conversion, and error handling. It also refreshes the project badges and links to current Swift resources.

Latest changes: The latest commits clarify that network failures are thrown as errors other than AppwriteError and add a general catch to the error-handling example.
