[CI][Integration] Add extension-wrapped union to integration data #50993

Describe the enhancement requested
Just as what was done in the C++ test suite in #50927, we would like to add extension-wrapped union data to the cross-implementation integration datagen, to make sure that this case is handled properly by all tested implementations.

Happy to take this on, thanks for the ping @alamb. I'll add extension-wrapped sparse and dense unions to the archery integration datagen (mirroring the C++ coverage from #50927) and let the integration matrix tell us which implementations need a temporary skip.
