build: pin the panel's Redis to 8.10.3 - #133

The panel database stack pinned redis:8.10.2. Redis 8.10.3 is the newest 8.x patch release (image published 2026-10-28, past the one-day age rule), so the pin moves to it in PINNED_VERSIONS and in every file the sync test checks: install-agenthits.sh, the weekly Trivy image audit, the install and component docs and the tests that use the pinned value. Postgres stays at 18.6: it is still the newest 18.x tag, and 19 is only published as 19rc1. The host stack compares versions numerically, so a panel host that already runs 8.10.3 is reported as current by builds that still pin 8.10.2; the Components update never moves Redis back. Checks: component-versions-sync, host-stack-rows, install-agenthits-update and host-stack-log tests (117 passed). Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
