With Minio now being unsupported, we need to find a replacement. [Silo](github.com/pgsty/silo) seems to be a fitting replacement. This PR replaces the containers used in tests (also using smaller distroless images), and adds a `replace` statement in go.mod to use the silo fork (in its latest version) instead.
