docs: drop LABORATORY.md

[compot-dev]

The test bench (devices, addresses, access, methods) is no longer kept in the public repository: it moved to one private registry shared by all projects that use the lab.

• LABORATORY.md removed.
• Links to it removed from the three READMEs and from docs/architecture.md, docs/testing.md, docs/transports.md, docs/debug.md.

Docs only, no version bump.
