fix(nvca-operator): update BYOO collector default

TL;DR

• Backport the BYOO OpenTelemetry Collector default 0.157.0-nv-0.1.1 to NVCA 3.2.

Additional Details

• Carries source and generated chart defaults, schema, docs, and release-image assertions from #968.
• Keeps explicit BYOO collector image overrides unchanged.
• Regenerates the vendored chart from the NVCA 3.2 source chart.
