chore: float Go version to latest 1.26.x at build time - #850
Switches from pinning an exact Go patch version to floating the patch across CI:
All three go.mod files (root, coredns/plugin, coredns/plugin/geoip): go 1.26.7 → go 1.26.0 (minimum floor, not a pin)
CI workflows: go-version-file: go.mod → go-version: '1.26' (picks up latest 1.26.x at build time)
Dockerfiles already use golang:1.26 (floating tag), so no change needed there.
Why
RHCL 1.5 is the last minor release — only patch releases from here on. This approach means Go stdlib security fixes flow through automatically without requiring a manual bump PR per CVE, reducing ongoing maintenance toil.
This mirrors the approach already used by mcp-gateway since mcp-gateway#1437.

Walkthrough
The root and CoreDNS Go module directives now use version 1.26.0. GitHub Actions workflows now select Go 1.26 and check for the latest matching release instead of reading the version from go.mod.
Changes: Go version alignment
Layer / File(s)
Summary
Align module and workflow Go versions go.mod, coredns/plugin/go.mod, coredns/plugin/geoip/go.mod, .github/workflows/ci.yaml, .github/workflows/ci-e2e-0.yaml, .github/workflows/build-images.yaml, .github/workflows/build-images-for-tag-release.yaml
The root and CoreDNS module directives now use version 1.26.0. CI, E2E, and image build workflows select Go 1.26 directly and check for the latest matching release. Existing cache settings remain unchanged.
CI now selects the latest Go 1.26 patch. The change appears mergeable with bounded owner awareness, but compatibility with the plugin’s lowered minimum remains unconfirmed.

Enable latest-patch checks for Go 1.26.
actions/setup-go defaults check-latest to false and can use an older matching Go version from the runner tool cache. Add check-latest: true to all changed Go setup steps so newer Go 1.26 security patches are selected when available.
IMPORTANT
Carefully review the code before committing. Ensure that it accurately replaces the highlighted code, contains no missing lines, and has no issues with indentation. Thoroughly test & benchmark the code to ensure it meets the requirements.

Keep the plugin minimum Go version at 1.26.7.
go 1.26.0 newly permits independent plugin builds with Go 1.26.0–1.26.6. Those releases can lack standard-library security fixes present in later Go 1.26 releases. The maintained image build uses floating golang:1.26, so this concern affects builds that select an older compiler rather than proving that the published image uses one.
