Updated the star history charts to use a working provider, as the current charts are broken due to GitHub stargazer API restrictions.

The star history charts in the README and markdown docs are currently broken because the underlying service relies on the GitHub stargazer API, which is now restricted. This change points the charts to a working alternative so the graphs render correctly again.
