- Reorder the dropdown options for workflow_dispatch
- Display the selected option in the job run (as the job name)

This just makes it so "major" isn't the default option.
Github actions doesn't show us the workflow inputs, but it's useful to know what this was run with.
The environment: "production" line already enforces multiple approvals, this is redundant.
