Add an app activity & resource usage view to Settings

Surface what's currently loaded/connected (Ollama and llama.cpp
loaded models, MCP server connections) plus this process's memory
footprint, via a new system:getActivity IPC call, so users can see
what the app is actually doing without digging through logs.
