chore: declare the markdown-remark dependency to knip, add the changeset

knip reads static imports, and @astrojs/markdown-remark is loaded by astro itself
for the rehype plugin in astro.config.mjs, so the dependency check called a
needed package unused. The changeset is empty on purpose: website/site is private
and is not in the release set.
