build: re-lock the release configurations to the catalog versions

3f16f42 moved AppCompat to 1.8.0, Paging to 3.5.1, Room to 2.8.5, KSP
to 2.3.12 and Okio to 3.18.2 but only rewrote the debug lock entries.
With lockAllConfigurations, every release configuration stayed pinned to
the old versions, so checkReleaseAarMetadata failed and no release task
could run (found by a refuting review; the green gate only covers
debug). Regenerated with :app:dependencies --write-locks, which also
drops work-runtime-ktx, no longer declared. Debug entries are unchanged;
:app:assembleRelease now builds a signed APK.
