MKdocs 2.x update will break pipeline - Update or move to zensical

Just saw this in the PR Workflow:

I also noticed the Material for MkDocs team started to develop zensical as a standalone replacement. Should almost be compatible to the mkdocs 1.x config.

Either way, some changes, updates might be required in the future.
