Create official Storybook version

This needs to be migrated to the appropriate EPIC template

Need to update our Storybook package so we can make it available on Storybook

Possible steps: Branch existing and swap out the engine

Pertinent Info:

• On 28 March Storybook 8 had a 4 month alpha -> release
• As of 5 May Storybook 9 has beta version 10
